Easy camping meal with shrimp

I've been looking for a quick way to prepare shrimp or other seafood on a grill especially when camping or on a road trip. You want something easy and quick with less work and little to no dishes to wash, here is one of the best recipe I created and perfected over the past year.


Ingredients:

  • 1 lbs of shrimp

  • 2 zucchini

  • 3 scallions

  • 1 lemon

  • 1 corn on the cob

  • cilantro

  • 1/2 package of green string beens

  • garlic cloves

  • tin foil

  • cumin

  • olive oil

  • salt & pepper






Step 1: Prep and cut everything


Wash all of your produce and shrimp. Defrost shrimp first, if its frozen. Cut corn into 4-5 pieces. Cut cilantro, garlic, string beans, zucchini and scallions. Zest lemon, then cut lemons into quarters. You are all set.


Step 2: Divide & setup


Cut 4 big squares of tin foil, lay them on the table and stand up their edges into pockets so the oil does not leak from the sides. Add olive oil onto each pocket, transfer shrimp, sprinkle with salt, pepper, and cumin. Experiment with cumin. If you put too much of it it will overpower your meal and it might taste very salty.


Once you are done with shrimp, add corn, zucchini and string beans. Sprinkle with salt and pepper again. Then add scallions, cilantro and lemon zest. Sprinkle with more cumin, olive oil and squeeze lemon juice into each tin foil. Close your pockets from sides so they are completely covered. You are all set!



Step 3: Grilling


This is the part that my husband does. Preheat your grill. Once grill is ready, transfer tin foil pockets to the grill, cover grill and grill for 10 min. Note, you might need to open them and use a spoon to mix your the contents a bit so the stuff on the top cooks through.


Recipe variations & modifications


You can most likely use any fish for this recipe. Just put your fish on the bottom of the tin foil pocket first. You can also use different seasoning or just salt & pepper if you don't like strong seasoning. You can also add 1 tbs of white wine into each pocket and your fish will taste even better!
